RIP Brutus... He may have been "just a dog" but he was part of our family. Brutus passed away on Friday,
July 21, 2006. We'll miss you Brutus and we hope you're happy where you are now. We all love you! Say hi to Cleo & Daisy

Spinach Artichoke Dip
1/2 Onion
1 Stick of Butter
Garlic to Taste
2 - 10 oz Boxes Chopped Spinach - Well Drained
4 oz Philadelphia Cream Cheese
8 oz Sour Cream (Should get additional Sour Cream for dipping after)
1 can Artichoke Hearts
2/3 cup Parmesan Cheese
8 oz Monterey Jack Cheese (can get the one with jalepenos for additional taste, it isn't spicy)
1. Saute onion and garlic in butter. Add artichoke hearts.
2. Add the Philadelphia Cream Cheese. Warm until melted.
3. Remove from heat. Add the Sour Cream and Spinach. Mix.
4. Add the Parmesan Cheese and half of the Monterey Jack Cheese. Mix; place in baking dish.
5. Add remaining Monterey Jack Cheese to top.
6. Bake at 350 degrees for 15-20 minutes
Homemade Chex Mix
(you may also buy the cereal with all three mixed in one box)
- 1/2 bag pretzel sticks
- 1/2 box cheerios
- 1 pound of pecans
- 1 pound of margarine (16
oz or 2 cups)
- 1 tablespoon of garlic
powder
- 1 teaspoon of garlic
salt
- 1/2 tablespoon of cayenne
pepper
Melt butter (in microwave
bowl or on stove); add garlic powder, garlic salt, and cayenne in the butter after it is melted, stir.
In a separate large
pan, add all other ingredients. Pour margarine over the mixture; pour evenly and stir while pouring. Mix well.
Bake in oven at 250
degrees for 1 1/2 to 2 hours. Stir occasionally.
Note: Mixture will be
hot and chewy when you first remove from the oven. Let it sit out for a couple of hours to get crispy. Enjoy!
Chilled Corn Dip (not actual name, just what we're calling it for now) Prep Time: 3 mins
1 can of corn drained (we use golden whole kernel but it's up to you)
1 can of black beans drained (we use Bush's and rinse them)
1 can of rotel drained (we use original but it's up to you)
Mix all together in bowl and serve chilled with Tostitos Scoops
(can add other ingredients as desired, this works for me because it's so easy and good just like this)

Prep Time: 5 mins
1 package of butterscotch candy morsels
1 package of white chocolate candy morsels
1 bag of chinese noodles
Mix butterscotch and white chocolate morsels, melt them, pour in chinese noodles and mix well together. Spoon out onto
wax paper.
Enjoy!
